Authentic Brazilian Feijoada Recipe: A Taste of Brazil in Every Bite

– 1 lb dried black beans, washed and soaked overnight
– 1 lb pork shoulder, cut into chunks
– 1 lb smoked sausage, sliced
– 1 lb smoked bacon, chopped
– 1 onion, chopped
– 4 cloves garlic, minced
– 1 bay leaf
– 3 cups water
– Salt and pepper
– 1 lb beef sirloin, cut into chunks
– 1 lb pork ribs, cut into individual ribs
– 2 tablespoons olive oil
– 2 oranges, sliced
– 1 bunch of collard greens, chopped
– 2 cups white rice, cooked
– Farofa (toasted cassava flour) for serving

Instructions:
1. In a large pot, add the soaked black beans, pork shoulder, sausage, bacon, onion, garlic, bay leaf, and water. Season with salt and pepper and bring to a boil.
2. Reduce heat to medium-low, cover the pot and let it simmer for about 2 hours, or until the beans are soft and the meat is tender.
3. In a separate pan, heat the olive oil over medium-high heat. Add the beef sirloin and pork ribs and cook until browned on all sides, about 5 minutes.
4. Add the browned meat to the pot with the beans and let it cook for an additional 30 minutes.
5. In the meantime, prepare the collard greens rinsing them and removing the stems. Roll the leaves and cut them into thin strips.
6. Heat a large skillet over medium heat and add the collard greens. Cook for 5 minutes, stirring occasionally, until wilted.
7. To serve, place a scoop of white rice in a bowl and top with a ladle of the feijoada. Add a few slices of orange on top and a side of collard greens. Serve with farofa on the side.
