Recipe: Pap and Morogo Stew – A Taste of Lesotho’s Traditional Cuisine

– 2 cups of maize meal
– 4 cups of water
– 1 teaspoon of salt
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 green pepper, chopped
– 2 tomatoes, chopped
– 1 cup of morogo (African spinach), chopped
– 1 cup of beef or chicken, cubed
– 1 tablespoon of cooking oil
– Salt and pepper to taste

Instructions:
1. In a large pot, bring the water to a boil. Add in the salt and slowly sprinkle in the maize meal while stirring continuously. This will prevent lumps from forming.
2. Once all the maize meal is added, reduce the heat to low and cover the pot. Let it simmer for about 30 minutes, stirring occasionally.
3. While the pap (maize meal) is cooking, heat the oil in a separate pan. Add in the onions, garlic, and green pepper and sauté until they become soft and translucent.
4. Add in the chopped tomatoes and let them cook for a few minutes until they start to break down.
5. Next, add in the cubed meat and cook until it is browned on all sides.
6. Once the meat is cooked, add in the morogo (African spinach) and season with salt and pepper to taste.
7. Let the stew simmer for about 15 minutes, until the morogo is wilted and the flavors have melded together.
8. To serve, scoop the pap onto a plate and make a well in the center. Pour the stew into the well and garnish with some chopped morogo on top.
