Reinventing the Wheel: Keto Chicken Vindaloo Curry Pizza!

The combination of a classic Indian vindaloo curry and a traditional pizza might sound a bit unconventional, but this fusion dish is a flavor-packed, keto-friendly delight that will make your taste buds dance!

Ingredients

For the Vindaloo Curry Chicken:

  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp whole black peppercorns
  • 1-3 whole cloves
  • 0.25 tsp ground cardamom
  • 0.5 tsp mustard seed
  • 1 tbsp chili powder
  • 3 tbsp red wine vinegar
  • 6 cloves fresh garlic
  • 3 slices fresh ginger (1″ diameter)
  • 2 tsp water
  • 0.5 tsp ground turmeric
  • 1 tsp coarse kosher salt
  • 2 lbs chicken thighs
  • 3 tbsp avocado oil
  • 0.5 small onion (white, yellow, or red)

For the Cucumber Salad Topping:

  • 1 medium cucumber
  • 0.5 small onion (white, yellow, or red)
  • 3 tbsp red wine vinegar
  • 3 tbsp avocado oil
  • 0.25 tsp sea salt

(Note: a keto-friendly pizza crust recipe was not found in time, but there are many recipes available online that can be used as a base for this pizza.)

Instructions

  1. Prepare the Vindaloo Paste: Combine the coriander, cumin, peppercorns, cloves, cardamom, mustard seeds, chili powder, red wine vinegar, garlic, ginger, turmeric, kosher salt, and water in a grinder or food processor. Blend until it forms a smooth paste. Add water as necessary if the paste is too dry​1​.
  2. Marinate the Chicken: Coat the chicken thighs evenly with the vindaloo paste and allow it to marinate in the fridge for at least 2 hours or overnight if possible​1​.
  3. Cook the Chicken: Heat a large pot over medium-high heat. Add the avocado oil, diced onion, and marinated chicken. Add 1 tablespoon of red wine vinegar and 1 cup of water. Simmer until the chicken is cooked and tender, about 45 minutes. Add water as necessary to keep the chicken moist. Stop adding water once the chicken is tender and let the sauce thicken​1​.
  4. Prepare the Cucumber Salad: Cut the cucumber and onion into thin slices. Mix them in a bowl with red wine vinegar, avocado oil, and sea salt. Adjust the seasoning to your preference​1​.
  5. Assemble the Pizza: Once you have prepared a keto-friendly pizza crust following your chosen recipe, spread the cooked vindaloo chicken evenly over the crust. Bake the pizza according to the crust recipe’s instructions.
  6. Serve: Once the pizza is done, top it with a scoop of the cucumber salad. Enjoy this delightful fusion of flavors​1​!
